B.T. Leigh’s is a maker of rubs and sauces for BBQ. We recently purchased their Complete Rub Combo Pack which includes the rub we are reviewing today, Somethin to Beef About, their spicy rub, Somethin to Cry About, one for chicken, Somethin to Cluck About, and their all-purpose rub, Somethin for Rubbing.
The shipping was quick, I ordered it on a Tuesday and it arrived by Saturday. We were going on a weekend getaway one of the following weekends and I knew there would be a grill available but I didn’t want to waste a lot of time on the cook. We had a really nice ribeye that I cut up and made kabobs with. Usually, this is a no-no. If we have a ribeye this nice only salt and pepper would be allowed on it. I rubbed the beef chunks with B.T. Leigh’s Somethin to Beef About rub and wondered if I just screwed up a beautifully marbled ribeye.
The beef sat overnight with the B.T. Leigh’s on it and the kabobs were assembled the next morning. That evening, we grilled them.
My wife prefers her beef more done than I do but we both like a charred outside and a juicy inside. She is more medium well, and I am on team medium to medium rare. The kabobs came off and looked delicious, we let them sit for a minute and then dug in.
The beef was cooked to perfection for both of us. The ribeye was quality and the B.T. Leigh’s did more than I expected for the meat and the pieces of attached fat. For the meat, the B.T. Leigh’s Somethin to Beef About added a wonderful flavor profile while still letting the natural flavor of the beef come through, this I appreciated. The other thing it did was formed a crust on the outside of the beef which added another layer of texture to the experience. And our favorite thing that the B.T. Leigh’s Somethin to Beef About Rub did was provide an even crispier crust on the pieces of fat attached to the beef. This turned out to be the tastiest part. The Sear of the fat and the crust of the rub made an outstanding combination.
Another impressive aspect of B.T. Leigh’s Somethin to Beef About Rub is that is stood up well to high direct heat from the charcoal. I have used rubs that char, taste burnt, or can ruin the flavor of the meat if you do not monitor the amount of direct heat used during the cook, B.T. Leigh’s took the direct heat, kept it’s flavor, and it could have taken more.
In Summary, We found B.T. Leigh’s Somethin to Beef About Rub impressive. I rarely use beef rubs because I prefer the taste of the beef not to be covered up by the taste of rubs. But, B.T. Leigh’s Somethin to Beef About adds a tasty flavor profile and still allows the flavor of the beef to come through. Along with the flavor, the charcoal adds, the beef itself, and the B.T. Leigh’s Somethin to Beef About, it makes for a wonderful combination that your invited guests will absolutely ask what your secret is.
